Candy Canes make sweet Christmas decorations, especially with the various colors and flavors available these days. But what do you do with them after Christmas? How about turning those leftover candy canes into another sweet treat? Here's a couple of recipes I found, courtesy of Recipes4Living.com.
Candy Cane Ring Cake
Ingredients
§ 1 pkg. super moist white cake mix
§ 3 egg whites
§ 1 C. water
§ 1/4 C. vegetable oil
§ 1/2 tsp. peppermint extract
§ 1/2 tsp. red food color
§ crushed peppermint hard candies
Directions
Heat oven to 350 degrees.
Generously grease and flour 12-cup bundt cake pan. Beat cake mix (dry), egg
whites, water, oil and extract in large bowl on low speed, scraping bowl
constantly, until moistened. Pour about 2 cups of the batter into pan. Pour about
3/4 cup and the batter into small bowl; stir in food color. Carefully pour pink batter over white
batter in pan. Carefully pour remaining batter over pink batter. Bake until cake pulls away form sides of pan and springs back when
touched lightly near center 45-50 minutes.
Cool 10 minutes; invert on wire
rack or heatproof serving plate. Remove pan; cool completely. Spread glaze over
top of cake, allowing some to drizzle down side. Sprinkle top with peppermint
candies.
Peppermint
Chocolate Fudge
Ingredients
§ 2 C. (12 oz.) milk chocolate chips
§ 1 C. (6 oz.) semi-sweet chocolate chips
§ 1 (14 oz.) can Eagle Brand® sweetened condensed milk (not
evaporated)
§ Dash salt
§ 1/2 tsp. peppermint extract
§ 1/4 C. crushed hard peppermint candy
Directions
In heavy saucepan, over low
heat, melt chocolate chips with condensed milk and salt. Remove from heat; stir in
peppermint extract. Spread evenly into wax paper-lined 8- or 9-inch square pan.
Sprinkle with peppermint candy. Chill 2 hours or until firm. Turn fudge onto
cutting board; peel off paper and cut into squares. Store covered in
refrigerator.

I am going to give you my Braciole recipe:
ReplyDeleteIngredients:
1 1/2 pounds flank steak, cut and pounded into thin slices about 4 inches wide by 6 inches long
Salt and freshly ground pepper
1/2 cup freshly grated Parmesan cheese, plus extra for serving
4 cloves garlic, minced
Parsley
Oregano
Jar of spaghetti sauce (or you can make your own)
OPTIONAL 1/4 pound Italian Mix Cheese (I use the Land O'lake 3 Italien cheese from the deli-ask them to thinly slice)
Directions:
Preheat oven to 350
Season the meat on both sides with salt and pepper to taste. In a bowl, combine the 1/2 cup Parmesan, garlic, oregano and parsley. Divide the mixture among the meat slices, spreading it into an even layer, and roll up each slice to enclose the filling. Secure each roll with string or toothpicks.
Take a 9 by 13 pan thinly layer at the bottom with Spaghetti Sauce. Put the meat rolls in the add a bit of cheese (this is OPTIONAL) on top.
Bake for 20 min
Let it set for about 15 minutes before serving

Stuffed Cabbage
ReplyDeleteParboiled Cabbage leaves
ground beef (you can use turkey too)
cooked white rice
salt/pepper to taste
chopped onion
dash or two of worchestshire sauce
can of tomato soup
Combine all the ingredients except the cabbage an soup. Take parboiled leaf and scoop a tablespoon of the meat mixture and roll it burrito style
lay flat in cooking pan and continue until mixture is gone.
Scoop out a teaspoonful or so of tomato sauce over each roll.
Pour some water on bottom of pan to prevent burning
Bake in 350 until done about an hour or so .

1 Box German Chocolate Cake Mix (I like Duncan Hines)
1 1 oz. Bottle Red Food Coloring
1/3 cup Vegetable Oil
1 ¼ cups Water
1 tsp. Vanilla Extract
3 Eggs
1 9 X 13 Baking Pan
1 can Cream Cheese Frosting
Betty Crocker Original Cream Cheese Frosting)
Cooking Spray
1. Preheat oven to 350 degrees.
2. Spray baking pan with cooking spray.
3. Put all liquids & the eggs into a large mixing bowl and stir until mixed.
4. Add the cake mix.
5. Beat on medium speed for 2 minutes.
6. Pour into pan and bake at 350 degrees for 50 minutes.
7. Let cool completely* & frost with the cream cheese frosting.
You can sprinkle some red & green candy sparkles over the top if you like.
Cake is done when a knife inserted into center of cake comes out clean.
*To cool faster, put pan into freezer for about 15 minutes.
